Banana Chocolate Chip Muffins


It’s a day over here. I’ve had a lot up my sleeve for the day. I made these muffins, I cleaned up a little, I have a paper due, I had to register for next semester, plus my little niece is in town. I got everything done. I’m pretty proud of that.

I was able to spend the day with my little niece on Monday. It was  a great surprise that she came up. I didn’t have any idea they were coming. I had bought her some little outfits. She wore one of them the day we went shopping. She looked so cute. I was really disappointed it rained, because we went to Cherokee. I wanted to get some pictures of her there, but well the rain ruined it. I found her some little moccasin’s. She has chubby little feet, so it’s been hard to find shoes she’d leave on or that actually will go on her feet. She’s worn them the last few days and seems to be leaving them alone. I am betting she probably just didn’t like the shoes they had been putting on her. They might be hurting her feet. We took the kids to lunch at Pizza Inn. Lord help us….it’s a dieters nightmare to go there. It was good though.

2 1/2 cups all purpose flour

1 cup dark brown sugar

1 1/2 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 eggs

1/2 cup vegetable oil

1 teaspoon vanilla

1 cup buttermilk

1 cup mashed bananas

3/4 cup chocolate chips

Preheat oven to 350 degrees. Whisk flour, sugar, baking soda, baking powder, and salt. In a separate bowl  mix eggs, oil, vanilla, buttermilk, and bananas. Add to flour mixture. Sprinkle with chocolate chips. Bake 20-25 minutes. Remove from muffin tins and let cool.
