Irish Boxty


We’ve really enjoyed St Patricks day for the last few years. It’s really been fun to experiment and make food for the family that isn’t stuff we’re used to cooking and eating. Last year my friend sent me this recipe link to boxty. I decided to look around and see what other people used as their recipes. I finally came across a few and I decided to just make my own, they’re all pretty similar. The boy child liked the recipe. He ate two of them and asked for more, but I ended up giving him other food. This year we’re doing something different than our traditional Irish stew. Bangers and mash was on the agenda for this year. It’ll be a hit I’m sure. These guys just love all things sausage.

Enjoy it ya’ll!

1 cup of grated potatoes, liquid drained

1 cup of mashed potatoes

1 cup self rising flour

2 eggs, lightly beaten

1 teaspoon black pepper

1/2 cup milk

oil or butter for frying

Mix together flour, pepper, and shredded potatoes. Add egg, milk and mashed potatoes. Stir. Once mixed prepare like pancakes and serve!
