Orange Chicken

It snowed last weekend. It was horrible. I wasn’t able to leave. We had 14 inches in some places, 16 in others. It was a lot of snow for here. The last time we had that much snow was 18 + inches in 1993. I remember that snow. It was crazy. We did lose power this go around. It wasn’t for a long time, but it was like 5 hours.

It upsets me a little, because my hubby has occupational therapy tomorrow, but I’m worried about taking him. I’m afraid to drive in the bad weather. I’m going to call my dad in the morning and see if he’ll take him for me. I just don’t want to  injure him more if I were to have a car accident.

We may be going in for another surgery, unless his wrist heals. Hopefully, it wont take too long to happen and we can skip the surgery all together. Hope that happens!!

 

4 pieces chicken

salt

pepper

2 tablespoons olive oil

1/3 cup orange juice

1 tablespoon minced onion

1/4 teaspoon rosemary

1/4 teaspoon tarragon

2. cups cooked yellow rice

orange rind

salt and pepper chicken. In a foil lined pan, add chicken. Mix the oil, orange juice, onion, rosemary, tarragon, and a pinch of salt in the bowl. Brush the chicken with mixture. Bake at 325 degrees basting occasionally. Turn chicken and baste. In a serving dish add the rice. Top with chicken. Pour sauce over the top. Garnish with orange rind.
