Lima Bean Re-runs

I love LIMA BEANS! I posted the highlighted link a while back….but ya’ll need to see it again. I love them.

Today the hubby went to scouts. I’ve not been going too much, because I haven’t felt 100% still. I did have my follow up appointment today. All went well. The Dr gave me a few goals to try to reach. Hopefully, it will work for long term. I’m still having off and on issues sleeping, but I think that’s just fear of over sleeping. The Dr did talk about how important it is for me to get 6-8 hours a night. I see my endocrinologist Friday, so hopefully it’ll be good too. I’m just happy all of this is over.

When I came home from the Dr today I sat down and I just knew I needed something comforting. My first thought was my lima beans. Hope you give them a try!

Ingredients:

32 oz chicken stock or broth

2 slices of bacon

2 pinches cayenne pepper

1 clove garlic, smashed

16 oz of baby lima beans

salt and pepper

Throw it all in a pot. Afterwards bring to a boil. Once pot is boiling, then cover with a lid and reduce heat to simmer until soft.

    1. It’s my favorite recipe! My endocrinologist says that green veggies are something I need more of, which is weird because I mostly eat green veggies, but anyway….I could literally sit and eat every single bit of these alone! I’d be happy as could be too! HA
