Tonight Cooper and I made pizza, which I’m going to post tomorrow. I love it when I can get Cooper to come into the kitchen with me. It’s been a crazy few months, but what I haven’t told you guys is I’m going to school for my bachelors degree. Having all this school work to do has made my time with my baby even more strained. I’m going to work hard to get into a routine. I’ve gotten to the point where I worry if I can juggle everything. I HATE this time of year. It happens every time. I have no idea how long it’ll take, but I’m certainly ready for it.
Cooper’s been back in school now for about a week. I’ve been paranoid because he started at a new school. He’s gotten lost on the bigger campus a few times. Overall, he seems to be doing really good. He’s really enjoying himself. He’s making new friends. I think that this can be a great thing. Let’s pray I make it through this without a nervous breakdown. LOL!
Now guys this recipe is rich! However, it’s PERFECT for my pizza!
1/4 cup butter
1 cup heavy cream
1 clove garlic, crushed
1 1/2 cup grated parmesan
1/4 cup chopped fresh parsley
Melt butter in a saucepan. Add cream and simmer for 5 minutes. Add garlic and cheese and whisk. Stir in parsley.
