Amish Cheeseburger Soup


In Lancaster Pennsylvania we had the best soup at this little Amish restaurant. We ended up going back again to get more of this soup and taking it back with us. We ate it for lunch for a few days because we just loved it. We stayed at this cool resort. It was a hotel shaped like a boat. Yes…a BOAT. Not any kind of boat though, like a old timey steam ship. When we walked into the hotel it had beautiful swinging doors to the bar. There was a lot of beautiful wooden desks, etc. They even had OLD FASHIONED post cards to send to people. They had beautiful things in their gift shop. A restaurant, all kinds of foods, and things. It had the most beautiful rooms. When we walked into the room it wasn’t a huge room, it was just standard. The beds had these beautiful golden tinted beddings on them. It smelled beautiful in the room. It really just suited us well. We had four people with us and the fact is at first I was scared that we’d be cramped and be arguing, but we weren’t. It was near the pool….the kids had fun, we had fun. It was a win, win. Anyway, we want to go back one day really soon!!

1/2 lb ground beef

3/4 cup chopped onion

3/4 cup shredded carrots

3/4 cup chopped celery

1 teaspoon dried basil

1 teaspoon dried parsley

4 tablespoons butter

3 cups chicken broth

4 cups diced potatoes

1/4 cup flour

4 oz cheddar cheese

4 oz velveeta

1 1/2 cup milk

1/2 teaspoon salt

1/4 teaspoon pepper

Brown beef and drain. Sauté onion, carrots, celery, basil, and parsley with 1 tablespoon butter. Add broth, potatoes, and beef. Simmer until potatoes are soft. Meanwhile, melt remaining 3 tablespoons butter. Stir in flour. Add milk. Cook until thick. Add salt and pepper. Stir into soup. Add cheese and stir until melted.
