I decided I wanted chicken pot pie, but to be honest, I’m NOT a fan of classic “pie crust” chicken pot pie. My other chicken pot pie recipe is good, but I it wasn’t what I wanted either. A while back my cousin Lisa posted on Facebook that she made chicken and biscuits and it looked SO GOOD and I knew I was needing to make it. I just decided to make my own recipe up, because I knew what I wanted, but I didn’t want to put potatoes in it like the other recipe calls for.
I registered for my classes. I’m trying to get my bachelors degree. I’ve already accomplished an associates degree, but I just wanted to go further. My friend says that I should have with to school to be a therapist…because well I rock in the advice department. No just kidding, I’m not going to toot my own horn here. Seriously though, I really am looking forward to this, but I am very nervous. What if I can’t finish it? Perhaps it’ll be too hard…I don’t know. One of the classes that I am taking is about legal writing. It has a ton of writing and I suck at writing. You can tell from my blog how horrible I am at it. I try, but….ya know!
1 cup chopped onion
1 cup celery
small bag of frozen mixed veggies
1/3 cup all purpose flour
1 1/2 cup milk, extra if mix is too thick
2 cups chicken broth
2 cups cooked chopped chicken
1 teaspoon salt
1/2 teaspoon pepper
Add butter to a frying pan. Add onion and celery. Cook until translucent. Add flour. Cook for one minute. Add chicken broth and milk. Stir until thickened. Add chicken and veggies. Cook until veggies are tender to your liking. If the mixture is too thick then add a little more broth. Add salt and pepper. Pour into a baking dish. Add biscuits to the top and bake until biscuits are lightly browned.
