Broccoli Cheddar Soup

I felt weary of this recipe. I’ve tried 100 potato soup and broccoli cheese recipes and I’ve just not found one I LOVE. It’s the same with French onion soup…none measure up to my high standards. I decided to go my own way. I looked at several different soup recipes for broccoli cheddar soup and just came up with my own. I did pretty good I must say!

I’ve finally seen the light at the end of the tunnel with wrapping up the cub scout year. I have some shopping to do, and a few loose ends to tie up! However, the most exciting thing happening is my niece, Ada will be born this week. It’s exciting! It’s my first blood born niece. It’s more special than any other niece or nephew I claim as mine. I love all of the one’s I have though. I don’t know when I’ll get to see her, but maybe soon.

 

Try this soup out ya’ll!

1/4 cup melted butter

1/4 cup flour

1 cup heavy cream

1 cup milk

2 cups chicken stock

1 1/2 cups chopped broccoli florets

1 cup matchstick cut carrots

1 stalk celery, thin sliced

1/2 a small onion fine chopped

2 1/2  cups sharp cheddar

Melt butter in stock pot, add onion and celery. Saute. Add flour. Cook for about a minute. Add chicken stock and cream. Add the broccoli and carrots. When cooked through, add cheese and stir until well mixed and melted. Add salt and pepper to taste. ENJOY!
