Cilantro Lime Chicken with Black Beans and Corn


4-6 pieces Chicken Breasts

1 Tablespoon Olive Oil

1 Lime Juiced

1 teaspoon cilantro

1 cup frozen corn

1 clove minced garlic

1 can of black beans, rinsed

1 teaspoon cumin

salt and pepper

1/2 onion, finely chopped

There’s two ways to make this:

1.  Throw everything in a crock pot. Cook on low for 6 hours.

2. Mix cumin, salt and pepper to taste, lime juice 1/2 the garlic. Saute onion, in olive oil. Add 1/2 garlic. Remove from pan. Add the chicken. You should have the chicken almost completely cooked through. Save marinade. Brown on both sides. Add back the onion and garlic. Add black beans, marinade, and the corn. Place chicken on top. Continue cooking until chicken is done, being careful not to burn the beans.

Double or triple this recipe and freeze it. You can make dinners quickly come together!
