I have been pretty busy. It’s been a crazy few months. A whirlwind. My husband and I have been doing cub scouts for a few years now. It’s definitely been a love and hate relationship. Some days have been really difficult and I’ve wanted to pull my hair out of my head. Other days…I have felt so blessed. It can be the most rewarding experience. When my son was in second grade he wanted to go to scouts and eventually I said ok. When we went to the very first meeting there was only one kid in the room. They were reading a cub scout book and that was it. Apparently, there was one other kid, but he wasn’t there that day. My husband decided that he was going to become the cub master. That week we contacted the other child’s parents. The mom said made the comment that it was such funny timing that they were getting ready to quit and that is why they didn’t come to the last meeting. The hubby and I took it over and the pack grew from 2 kids in a room to 3. Within two months we have 5 kids. That year we did a recruitment and went from 5 kids to over 20 kids. We lost a bunch of those kids, because we couldn’t get any leadership roles filled. Eventually, we did get leadership. Our numbers have increased dramatically since them. We have a really decent size pack right now. We’re doing pretty good. The point is….it has been a good experience; not only for me, but for C. He has fun!The issue that we have is that on scout nights we have a really hard time with dinner. I have found that crockpot meals work perfect. One of the things I do is BBQ Chicken. It’s just versatile. I’ve used it to make nachos, quesadillas, just plain ol’ chicken, and whatever else I can think of.
Half a bottle of BBQ sauce
1/4 cup of water
4 pieces of chicken
I mix everything together in the crockpot. Cook on low for 6-8 hours. It’s that simple!
