I’ll tell you our family loved Mexican food. I’ve come across several of these fajita recipes. This one is probably my favorite. You can add tomatoes, more colors of peppers, whatever you’d like. It’s pretty good. The downfall is it is definitely not authentic. When I made these I made these I made my own tortillas too. They were fantastic. I encourage you to try out that recipe as well. It’s pretty good.
I’ve been working today trying to get my college stuff straightened out. Apparently there’s an issue with the associates degree that I have and so it’s making me have to jump through hoops to get into a university. It’s so frustrating. Hopefully it will fix itself. I doubt it, but it might just mean I have to take extra classes, which totally stinks. I really need to figure it out though. I might be able to finish my degree…I really don’t know.
half a lemon
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
4 teaspoons oil
2 garlic cloves
1 teaspoon cumin
1 teaspoon oregano
1 1/2 lb chicken breasts cut into half inch strips
1 large onion sliced
1 green pepper, julienned
Combine soy, lemon, Worcestershire, oil, garlic, cumin, and oregano. Toss chicken and put on a baking sheet with the vegetables. Drizzle remaining mixture on the chicken and veggies. Cook chicken until juice is clear. Serve with tortillas.
