Key West Chicken

I love recipes that call for pantry staples. Those are the best one’s to stock up on. It allows us to plan a fairly inexpensive meal for the family. I really like this recipe. It’s a go to for me!

A few days ago I invited the girls over. The girls are made up of some high school friends that I still talk to and some mom’s that I know from cub scouts. I’d love to have some more girls over that I know, but we just haven’t spread out that far yet…but anyway, I was really struggling between this recipe and my amazing chicken recipe. They both go with anything. Both are simple, easy to throw together….easy clean up. In a pinch you can throw either of them together as long as you at least marinade for 30 minutes and you have to baste the chicken while it cooks. Both are just good. I eventually decided to do the other one, but a few days later decided I needed to make this one. Man I love this recipe…..

It’s always fun with the girls. They cheer me up, they make me laugh, they just listen. Sometimes that’s the most important thing we can ask for. Sometimes just having someone in your corner makes all the difference in the world. The feeling of belonging sometimes makes all the difference in the world. I really couldn’t ask for better friends.

Chicken, cubed

3 tablespoons soy sauce

2 tablespoons honey

1/2-3/4 teaspoons lime juice

1 heaping teaspoon garlic, minced

Optional: 1/4 red bell pepper, finely diced

Mix all ingredients together. Marinade for at least 30 minutes. Grill. Baste 2 or 3 times during grilling.
