I learned a lesson. First let me tell you I LOVE LOVE LOVE French onion soup. When my husband took me out on a date night a while back we went to this restaurant and of course I ordered their soup. BEST SOUP EVER! I made this recipe a few weeks back and forgotten to post it….Honestly I just couldn’t find the words for this post….I liked the soup, but it was missing something. Honestly, I wasn’t going to even post this recipe, because I wasn’t sure how ya’ll would react. Here’s what went wrong. The owner of the restaurant came to my table and I started talking about the soup. She told me any recipe for onion soup can be a good recipe…the trick is cooking the onions down. I didn’t do that. I followed what the recipe said…so guys trust me…cook these things down…low and slow. the longer the better. Don’t over cook them or burn them though. Just throw in some butter and a little sugar to caramelize them and low and slow.
3 white onions, halved and sliced.
1 yellow onion, halved and sliced
1 dry bay leaf
1 teaspoon dry thyme
1 teaspoon kosher salt
1/2 teaspoon black pepper
5 cups beef stock
1/3 cup brand
4 tablespoons of butter
Layer all ingredients in a crockpot. Cook in crockpot for 6-7 hours.
