Ravioli Soup


Oddly….I’m not a fan of Ravioli. I never really was. Sometimes I make it because my boys like it. I came across a recipe for a ravioli soup. However, I didn’t like it. I changed it up to suit our own needs. What I find pretty funny about my distaste for ravioli is the fact that I DO like tortellini…it’s the same thing, virtually. What I’d like to do is next time add something to it. Maybe spinach would be a great addition.

1 lbs bulk sausage

1 medium onion, fine chopped

1/2 red bell pepper, chopped

1 1/2 teaspoon minced garlic

1 teaspoon basil

1 teaspoon oregano

15 oz tomato sauce

3 cups chicken broth

10-20 oz of ravioli frozen

Mozzarella Cheese

Brown and crumble sausage over medium heat. Drain excess grease and return to heat. Add onion and pepper and cook until soft. Add basil and oregano. Add garlic and cook until garlic is fragrant. Add chicken broth and tomato sauce. Simmer until pasta is cooked.
