I’m always on the hunt for recipes for my kid’s lunch. I was cruising Pinterest and came across this gem. No Bake Monster Cookie Energy Balls at One Little Project was a hit. For whatever reasons it’s not letting me directly connect the link, so I’ll work on this, but in the meantime go to http://www.onelittleproject.com and you’ll see them there.
I love that these are so simple that Cooper can help me make them. He loves to help in the kitchen. Honestly, I love to spend time with him, so having him helping is the best. Whenever we are in the kitchen together, we get that moment to talk about things that might be bothering him, or about things that he’s happy and excited about. It makes me feel like it’s opening that parental communication. Hopefully, he trusts me enough to talk to me about anything. It’s been a rough year for Cooper. He’s been through a lot of things. Loss, gain, but whatever has happened, we’ve tried really hard as his parents to keep things as normal as we possibly can. He has structure, he has rules, and he’s generally really good about following them. We are getting into those teenage years though, so the smart mouth is starting, but we’re all learning. It’ll work out! I just hope no matter what he knows I love him unconditionally.
1 1/2 cups oatmeal
1/2 cups peanut butter
1/3 cups honey
1/4 cups mini m&m’s
1/4 cups mini chocolate chips
1/2 teaspoon vanilla
Add all ingredients together. Take a small cookie scooper and scoop into equal size balls. Roll them to make them round. Put in the fridge for 20 minutes. Store in your fridge!
