Chicken Parmesan Mini’s


I was inspired by a recipe I seen on Pinterest the other day. The blog poster made their own chicken patties and used a hamburger bun to finish it off. I didn’t have time for all of that for lunch yesterday. What I did was I had a bag of chicken strips in the freezer. Score! I had left over rolls from dinner the night before. Score 2! I had cheese in the fridge. That’s just a common staple for me. I keep us loaded on cheese. It’s my favorite. What really helped was I had spaghetti sauce in the pantry! Score 3! I cooked my chicken. Heated my sauce and threw this gem together. It was really good. The boys ate it up pretty quickly. I love that it didn’t take me very long to make. I need recipes like that. I’ve realized I make a lot of things that require time. I’d really like to start including some speedy, cheap, and easy recipes in my blog. What do you guys think? I just have days where I’m so busy and I run out of time to do things. It’s definitely important to have these things too.

Spaghetti sauce

Mozzarella cheese

Cook chicken strips according to the directions. Heat the spaghetti sauce up. Cut rolls in half and place the chicken on top of them. Add a little bit of sauce and top with cheese. Heat in oven until cheese is completely melted. Serve.
