I get so tired of Cooper begging for spaghetti. It gets so old. I decided to make what he wanted, but to give it a twist, just so my palate thinks I’m eating something different. What I did was I used my favorite sauce, noodles, and mozzarella cheese. Cooper loved it. So did the husband. They ate it from dinner and turned around and ate it for lunch the next day. We had no waste at all. Sometimes having left overs can really be beneficial, especially if you really like.
Every time I make spaghetti I think of my sister, Shae. Shae was always my baby when she was little. There was a huge age difference between us, but I was old enough to be her mother myself. My mom and I would make spaghetti and Shae LOVED it. I have a picture of her with spaghetti all over her face, in her hair, up her arms. It was even on her eye lids. It was so funny and so cute. We’d dig spaghetti out of her hair forever LOL.

Layer Mozzarella cheese and spaghetti in a glass baking dish. Bake in oven at 350 until hot and bubbling. Serve.
