Chicken Red Beans and Rice


I’ve always been fascinated with Cajun type food. I’ve been to New Orleans once. I didn’t get to do a lot there though. We did have dinner there, but I didn’t get to eat any real New Orleans food. Instead we just headed over to a popular off the interstate restaurant. I wish I had the ability to have some good ol’ Cajun authentic food. We were on our way to Houston, TX. My at the time boyfriend has family that lives there. I wont ever forget how nervous I was. It was the first time I was going to be meeting his family.  It turned out ok, even though the relationship didn’t. It ended. I moved on and I forgot all about them, but my desire to do Cajun food continued. This is definitely not a real Cajun recipe, but it’s a fast recipe to give you that quick fix when you need it.

3 cans red beans

1 lb smoked sausage

4 tablespoons butter

1/2 teaspoon pepper

1 teaspoon Cajun seasoning

1/4 teaspoon paprika

1 teaspoon garlic powder

1-2 chicken breasts roasted and shredded


Melt butter in a skillet. Add sliced up sausage and brown lightly. Add all remaining ingredients and simmer. Serve over rice.
