Every year at Thanksgiving my family has these for as long as I can remember. I actually love sweet potatoes but I don’t like them super sweet. I think they are naturally a sweet veggie anyway. I never realized how much healthier sweet potatoes are for you than just regular old potatoes. When I was younger we didn’t have sweet potatoes any other way except for this way. I’ve been trying to spread my wings a little bit and try new things lately though. My goal is to begin trying new veggies and try them in different ways.
3-4 sweet potatoes
2-3 Tablespoons dark brown sugar
1 Tablespoon butter
Peel and cube potatoes. Boil in water until they are soft. Drain and Mash potatoes. Add butter and sugar. Put in casserole dish and top with marshmallows. Put under broil until marshmallows are browned and melted.
