Best Ribs ever

I love this recipe. This is another one of those recipes that I’m not quiet sure where I got it from. I had just wrote it down and threw it in my recipe folder with plans of trying it later. When I did try it later, it quickly ended up being a family favorite. I’ve made it a few dozen times. My family begs for this to be made in the summer months. I’ve already got requests to make it again soon!

3/4 cup apple juice

1/2 cup beer

1/2 cup olive oil

1/4 cup dark brown sugar

1 Tablespoon Worcestershire sauce

1 Tablespoon Garlic

1 teaspoon salt

1 teaspoon thyme

1 teaspoon pepper

1/2 teaspoon cayenne pepper

Add the brown sugar, olive oil, apple juice and canola oil to a bowl.

Add Worcestershire sauce.

Add salt. Add garlic.

Add thyme…

Add pepper.

Add cayenne.

Put in a baggy…

Add the meat. Make sure to rotate halfway through marinating process…YUM!

Lasagna

Every week my 10 year old says Mom can you make Lasagna tonight? I know I should give in more often than I do. He’s only little once. Usually, I’ll say No because I don’t have enough time. It’s not how you think though. He usually waits to ask at like 6pm. I tell him no, because if I did it’d be 9pm before we eat. I say this because the steps in this recipe cause it to take a while. It’s so worth the effort though.

2 12 oz cans of tomato sauce

2 bags of mozzarella cheese

1 small onion

1 box of lasagna noodles

1 tablespoon of garlic

1 small can of tomato paste

1 small container of ricotta cheese

1 lbs hamburger meat

2 teaspoons parsley

2 teaspoons basil

1 egg

1/2 teaspoon pepper

1 teaspoon salt

3/4 cup parmesan cheese

Add tomato sauce to a pot. Add tomato paste. Add basil to pot. Add salt. Put on a burner on low. In a large pot add olive oil and salt and bring to a boil. Add noodles and cook. When finished cooking pour in a strainer, run under cold water. Lay on a paper towel to remove access water. In a bowl add parsley. Add pepper. Add Ricotta. Add Egg. Add parmesan. Mix…

In a frying pan add meat and onion. Add garlic. Cook, drain add to the tomato sauce. Add a little sauce to the bottom of the pan. Layer noodles, ricotta mix, sauce mix, shredded cheese, then noodles. Repeat until out of ingredients. Add parm to the top bake at 350 degrees for 60 minutes. Let cool 15 minutes before you cut and serve.

All Purpose Marinade

I love chicken. It’s my second favorite love. I love my grill too. What I love about this recipe is it’s sweet, it’s tangy, it’s salty, it just blends well. I invited a cub scout parent over once while he was having a rough time after a separation. We were just trying to be nice. Now every time I see this fellow, he says…About that chicken! LOL

1 cup of vegetable oil or olive oil

3/4 cup soy sauce

1/3 Cup lemon juice

1/4 cup Worcestershire sauce

1/4 cup prepared mustard

1 tablespoon black pepper

2 large garlic cloves

Chicken, Beef, or Pork. You could possibly use another meat, but I’ve not tried it.

Add all ingredients together.

Marinade 8-24 hours. Grill or bake

Chicken

BBQ Chicken Nachos

Eight years of marriage and my husband takes me to this restaurant called Copper River Grill. We had this really sweet waitress named Denae. She suggested we try these BBQ chicken nachos. We did and we loved them. We decided to try to cook it ourselves at home and maybe we could reminisce about our sweet eight year anniversary.

1 bag tortilla chips

3 chicken breasts

Mexican dipping cheese

1 bottle of bbq sauce

 

Mix 1/2 cup water with half a bottle of BBQ. Add the chicken. Cook in crockpot for 6-8 hours. Separate into chunks and add back to bbq sauce. Add tortillas to a plate and heat in microwave for about 40 seconds. Also prepare the Mexican dipping sauce per directions.

This is a wonderful recipe. It is very easy to make. My family thought it was the best thing ever. This was definitely a hit. The first time I made this, I made it for Easter morning. They guys loved it and they literally ate every single bit of it. It’s a definite keeper.

1 can of Pillsbury Buttermilk Biscuits

7 eggs

3/4 cup milk

salt and pepper to taste

1 package of sausage

10 pieces of ham diced

8-16 oz mozzarella cheese

8-16 oz cheddar cheese

Brown Sausage and dice ham. Press biscuits in the bottom of a buttered dish. Add sausage and ham layer. Add cheeses mixed. Mix eggs, milk, and salt and pepper to taste. Pour over biscuit layers.

Bake 350 degrees for 30 minutes

Mamaw’s Broccoli Casserole

When I was a kid my grandmother used to make this all the time for us. My mother makes a broccoli casserole too. I loved them both, but mamaw’s always tasted better. I’m not sure why, but it does. I have  so many good memories with my grandmother. She is the best grandmother I have.  She was caring and loving. There wasn’t ever a time she didn’t take care of things that I needed.

One sleeve of ritz  crackers

Velveeta cheese

1 can of cheddar cheese soup

Broccoli

Steam or boil broccoli. Put broccoli in a casserole dish mix with soup. Place Velveeta cut into slices over top. Crush crackers over top. Bake at 350 degrees until crackers are browned and cheese is melted.

My son LOVES banana bread. I never put nuts in mine because I have an allergy. What I usually do is change it up a bit. Sometimes I do put chocolate chips in it. Sometimes I do not. It really depends on what I have on hand.  I have made French toast with it before and the kids loved it. This can be a snack for after school too. My littlest one likes to do that with his. You’ll love this recipe.

2 cups flour

1 cup sugar

2 teaspoons baking powder

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

3 ripe bananas

2 eggs

1/3 cup oil

1 teaspoon vanilla

1 cup chopped nuts, optional

1/2 cup chocolate chips, optional

Put bananas in a bowl and smash them with a fork. Add eggs, milk, oil, and vanilla and mix. Separately, add all dry ingredients to a bowl. Add the dry to liquid and mix. Pour into a bread pan and cook in a preheated 350 degree oven for 50-60 minutes until done.
