Lima Beans

Lima beans are a favorite in my house. For a long time I didn’t make them because I never knew how to cook them. This recipe is fantastic. When I make this recipe, my little boy, who is a not so picky eater loves it. He usually will ask for seconds. He hasn’t always been this way though. At one point he’d whine and cry and insist that he wasn’t going to eat them. How does one solve this common childhood issue? Well…I thought about it. I tried things that failed. Finally, I thought you know what…it doesn’t hurt to sit on his plate. He doesn’t have to eat it. He doesn’t have to like it. If it’s something that made him literally gag, then ok, I’d not torture him. What I got out of this ordeal was a kid who only refuses to eat very minimal things. This includes things like tomatoes, mayo, and such. There’s no hard frozen gross beans in this recipe! Give this recipe a try!!

Ingredients:

32 oz chicken stock or broth

2 slices of bacon

2 pinches cayenne pepper

1 clove garlic, smashed

16 oz of baby lima beans

salt and pepper

Throw it all in a pot. Afterwards bring to a boil. Once pot is boiling, then cover with a lid and reduce heat to simmer until soft.
